- 01Yes, and we mean it. TAP is a 100% gluten-free restaurant, not a gluten-free section inside a regular menu. Every single item we serve, from our tapioca sandwiches and açaí bowls to our pão de queijo, is naturally gluten-free. This isn't a marketing claim. It's a commitment baked into everything we do: how we source our ingredients, how our kitchen is designed, and how our team is trained. TAP was built as a gluten-free safe spot, which is why people with celiac disease, gluten intolerance, and gluten-free lifestyles trust us every day.
- 02TAP is a 100% gluten-free environment, which means gluten is never brought into our kitchen and dining area. This makes us one of the safest dining options for people with celiac disease or severe gluten sensitivity. For other allergens — including dairy, eggs, and nuts — some of our menu items do contain these ingredients. We always encourage you to speak with our team directly at any location if you have specific allergy concerns. Our staff is trained to help you navigate the menu safely and with care.
- 03The answer is simple: we build our menu around traditional Brazilian ingredients that are naturally gluten-free. Cassava (tapioca starch) is the base of our tapioca sandwiches and pão de queijo — it's a root vegetable, not a grain, and contains no gluten whatsoever. Açaí is a fruit from the Amazon rainforest in Brazil. Our smoothies are made with fresh fruit and also plant-based options. Brazil's culinary heritage naturally relies on cassava, fruits, and whole ingredients rather than wheat. We didn't have to compromise our menu to go gluten-free — we just stayed true to where the food comes from.
